Making olive oil

After harvesting the crops, the olives that have been collected have to be transferred on the same day, for oil-production to a special organic cold press oil mill.

After that, the olive oil is stored in special stainless steel tanks, where maturation takes place in the appropriate conditions of photoprotection and thermal insulation.
