Harvest

The harvest of the crop starts at the beginning of November when the olive is at the appropriate maturation stage, so that we ensure the highest quality.

To begin with, the harvesting machines that are used have a rechargeable battery, so they are ecofriendly, without pollutants and are well-cleaned so as to avoid product contamination.

We avoid injuring the branches or the crop. We only store the olives in jute bags (from fiber) for better ventilation of the crop and protection of the quality.

After finishing the daily harvest we transfer the olives promptly for oil-production. This is the hardest period of all the growing season, since work starts at fist lights and continues until late in the afternoon.
